Paper, Metal or Cloth: Which Coffee Filter Should You Use?

Most people choose a coffee filter once, by accident, because it came with the brewer. It is worth revisiting, because the filter changes the cup more than almost any other component at that price — and it is the only one that alters what physically ends up in your body.

There are three materials in common use, and they are not three grades of the same thing. They are three different decisions.

What a Filter Actually Does

A filter has two jobs that pull in opposite directions. It has to hold back the coffee grounds, and it has to let the brewed liquid through at a rate that suits the method.

The interesting part is what happens to everything in between those two extremes: the fines (dust-sized particles produced by any grinder) and the coffee oils. Whether those pass through or get held back is the entire difference between a clean cup and a heavy one, and it is decided by the filter material and nothing else.

Paper: Clarity, and One Health Distinction

Paper is the most selective of the three. It catches fines almost completely and absorbs a significant share of the coffee oils, which is why paper-filtered coffee tastes clean, bright and comparatively light-bodied. If you are drinking a single origin specifically to taste what makes it distinctive, paper gets out of the way better than anything else.

There is also a distinction here that goes beyond flavour, and it is worth stating plainly because it is frequently muddled. Unfiltered coffee retains compounds called diterpenes — cafestol and kahweol — which paper filters largely remove. This is a real, measurable difference between paper-filtered coffee and coffee made with metal or in a French press. Whether it matters for you depends on how much coffee you drink and your own health picture, and that is a question for a qualified healthcare professional rather than for a coffee site. But if someone has ever mentioned it to you, this is the mechanism they were describing, and switching to paper is how it gets addressed.

One habit: rinse the paper before brewing. It removes the papery taste and preheats the brewer, and it takes ten seconds.

Metal: Body, Texture and No Consumables

A metal filter holds back the grounds and lets almost everything else through. The oils pass, so the cup has weight and a fuller mouthfeel; the fines pass, so there is sediment.

The consequence people underestimate is that metal exposes your grinder. Every particle your grinder produces goes into the cup, so an inconsistent grind that paper would have quietly filtered out becomes something you can taste and feel. If you are using a basic grinder, metal will be less flattering than paper. If you have a good one, metal will show you what you paid for.

The other consideration is cleaning, and it is not optional. Coffee oils soak into the mesh, stay there and turn rancid — and rinsing does not lift oil. A metal filter that has never been properly degreased will add a stale, faintly bitter note to coffee that is otherwise fresh.

Cloth: The Overlooked Middle

Cloth sits between the two and is genuinely distinct rather than a compromise. It blocks fines nearly as well as paper while letting more of the oils through, producing a cup that is clear but noticeably rounder and softer in texture than paper gives.

Cloth is also the traditional filter for several brewing methods rather than a modern novelty — the National Coffee Association notes that cloth is the most common material for cold brew filters, with paper used when extra filtration is wanted.

The catch is maintenance, and it is a real commitment. A cloth filter left damp will develop mould and sour smells, and one that is never deep-cleaned accumulates oils exactly like metal does. The National Coffee Association’s guidance for reusable filters is to boil them in fresh water for ten minutes every six to eight weeks. Between deep cleans, rinse thoroughly and let it dry completely — or store it submerged in clean water in the fridge, which is what many long-term cloth users do.

Shape Matters Too, and for a Measurable Reason

Material is the main decision, but the geometry of the filter changes how water moves through the coffee — and unlike most things in coffee, this one has a number attached.

The National Coffee Association notes that a conical brewer has walls at a 60° angle, which creates a faster and more continuous flow rate. That single geometric fact drives the practical difference between the two common shapes:

  • Cone. The bed is deep in the middle and shallow at the edges, and water converges toward one exit point. Flow is faster and more continuous, which gives you more control — and more opportunity to get it wrong. Cones reward attention.
  • Flat bottom. The bed is an even depth across a wider area, so water passes through more uniformly and the brew is harder to disturb. Less control, more consistency. Flat-bottom brewers are noticeably more forgiving of a clumsy pour.

If your pour-over results swing from day to day and you would rather they did not, changing shape is a more effective intervention than changing material.

Bleached or Unbleached?

This generates more concern than it deserves, and the answer is short.

Unbleached brown paper is not purer in any way that matters — it is simply undyed. It does carry a stronger papery taste, which is exactly what rinsing removes. Bleached paper for coffee is typically processed without elemental chlorine and has a fainter paper flavour to begin with.

In practice: rinse either one and the difference largely disappears. Fail to rinse and unbleached is the one you will taste. Choose on environmental preference if you have one, and rinse regardless.

A Note on Fit

Filters are not interchangeable between brewers even when the sizes sound similar, and a poor fit undoes everything above. A filter that does not sit flush lets water run down the gap between paper and brewer wall, bypassing the coffee entirely — which produces a weak, sour cup that no amount of grind adjustment will fix, because the water never met the coffee at all.

If you recently switched filter brands and your coffee suddenly went thin for no reason you can identify, check the fit before you change anything else.

Choosing by What You Actually Want

  • You want to taste origin character clearly → paper.
  • You want body and weight, and you have a good grinder → metal.
  • You have been told to reduce diterpenes → paper, without hesitation.
  • You want to stop buying consumables and will maintain it → metal or cloth.
  • You want clarity and body at once, and do not mind upkeep → cloth.
  • Your mornings are rushed and cleanup decides everything → paper. It goes in the bin with the grounds.

The honest summary is that none of these is the best filter. Paper is the safest default and the easiest to live with; metal is the most rewarding if your grinder deserves it; cloth is the most interesting if you enjoy the ritual enough to look after it. What matters is that the choice is a real one — and that it was probably made for you by whoever packaged your brewer.
